Tasty Tuesday: Pumpkin Donuts


Who doesn't love donuts? and who doesn't love pumpkin? I have the best of both worlds today with a super easy pumpkin donuts hole recipe. The best part is that these little babies are baked not fried so you can feel even better about having a few! They are the perfect fall treat! Made them for our tailgate this last weekend and they were a hit!

For the Donuts:

  • 1 3/4 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg 
  • 1/2 teaspoon allspice
  • 1/8 teaspoon ground cloves 
  • 1/3 cup vegetable oil
  • 1/2 cup brown sugar 
  • 1 egg
  • 1 teaspoon of vanilla
  • 3/4 pumpkin puree (not pumpkin pie filling)
  • 1/2 cup low fat milk
For the Coating
  • 1 stick of unsalted butter, melted
  • 2/3 cup sugar
  • 2 tablespoons of cinnamon 
Preheat oven to 350 degrees. Grease a 24 cup mini muffin tin with spray.

In a medium bowl, whisk together the flour, baking power, cinnamon, nutmeg, allspice and cloves. In a separate large bowl, combine oil, brown sugar, egg, vanilla, pumpkin and milk until smooth. Add dry ingredients and stir until just combined. Do not over mix the batter.

Divide into muffin tin. You will have enough batter to do a few more after the first batch. Bake for 10-12 min or until it passes the toothpick test. 

Remove from oven and allow to cool for a couple of minutes. Melt butter in one bow l and combine sugar and cinnamon in another bowl. Dip each muffin into the butter then into the sugar mixtures. Repeat. Serve immediately. 

**I was quite generous in my spices the second time around and i did like what it did to things.
