Tuesday's are Tasty


YUMMY!

This weekend my roomie and I decided to whip up some dinner together. I decided to make my grandma's pork chops and my roomie wanted to try out a Hot Spinach and Artichoke dip. And let me just say this dip was to die for! And to make things even better its the skinny version! You must try out this amazing recipe, actually you should try out many of the recipes found on Gina's Skinny Recipes !  But for now here is the recipe. The only thing we did differently was at the end of the baking period we topped the whole things with left over mozzarella and put it under the broiler. Made for that crispy cheese top that you always get when you go to restaurants and order it :) Try this out! I promise you will not be disappointed!


Ingredients:
  • 13.75 oz artichoke hearts packed in water, drained
  • 10 oz frozen spinach, thawed and squeezed
  • 1/4 cup chopped shallots
  • 1 clove garlic
  • 1/2 cup fat free Greek yogurt
  • 1/2 cup light mayonnaise
  • 2/3 cup Parmigiano Reggiano
  • 4 oz shredded part skim mozzarella cheese
  • salt and fresh pepper to taste
  • olive oil spray

Directions:

Preheat oven to 375°.

In a small food processor, coarsely chop the artichoke hearts with the garlic and shallots.

Combine all the ingredients in a medium bowl. Place in an oven-proof dish and bake at 375° for 20-25 minutes, until hot and cheese is melted. Serve right away. (also good the next day)

Can be made one day in advance and stored in the refrigerator before baking. Makes about 3 3/4 cups.
